Quick question for 5D Mark IV owners - When using the spot meter in M mode, should the red square in the center of the viewfinder light up? It did on my old Mark III and I'm just wondering if it should be on this model, as well?

Not that I know of. I don't recall that on the 5D3 so maybe I'm missing something with the 5D4. You can set global VF illumination for both One Shot and AI Servo.

I just sent my camera in because I had a bunch of dust in the viewfinder after a trip to Grand Tetons. Now I'm wondering if I have a secondary problem. Ugh.

Purple AF menus - tab 5. VF Display illumination. When in that menu press the Q button and you can also set up AI Servo.

It is spot metering, I guess I'm just used to the visual cue of the light. Maybe it doesn't do that on this model.

Is overall photo exposure better judged by a well adjusted rear LCD or the histogram?

Is it better to underexpose the image a tad and increase the shadows in post or overexpose a tad and lower the highlights in post?
