I have a Macbook Pro 2018, 2.6 GHz I7, Radeon Pro 560X 4096 MB Intel UHD Graphics 630 1536 MB With an Eizo CE 240 ext monitor.

I used to have Mac Pros, Windows machines that I built that were powerhouses but Now that I do not do video wondering if I need all that now days.

I am getting back into photography after selling studio after 10 years of full time. So far seems to be working fine but are the new Imacs better and worth buying.

I do have a couple old windows machines I could gut and rebuild as well.

Thoughts?

I don't think you'll see a huge upgrade in the sense of speed. The biggest change I could see would be in ingest and export. The iMac displays are pretty incredible though. So that would be nice to use even with your Eizo. I'd imagine it really isn't worth the upgrade though.

Either way building a PC would be much more cost effective if you're okay with continuing to use the Eizo(which is great). The new Ryzen processors are pretty incredible for the price and depending on your budget, you could end up with an incredible machine that will last you 5+ years.

What kind of image work do you plan on doing?

You don't explain why you are looking into new systems? What's the problem with your current laptop that leaves something else to be desired? Besides, you already have a high quality Eizo monitor that you can connect to your laptop. So what's the point of getting an all-in-one system (iMac) with a built-in monitor?

nVidia dGPU will always perform better in Adobe applications. I used to have MBP with R9 370X - mid 2015 and the performance was okay-ish. When I stressed my MBP with a lot of masks and smart objects, warps etc - it went pretty slow.

I am also considering whether to go after some newer MBP with 560 dGPU or to buy mid 2015 again :)) However, MBP makes a really awesome portable device with amazing speakers, trackpad and display anywhere you take it. I also see mag-safe as a big advantage.

Greater performance will be achieved in iMAC for sure... :)
