Maybe for his next menu, I'm sure as the restaurant gets going he will change the menu at some point.

The power of that program does lend itself to doing some tasks very well if willing to go with the subscription plan. There are other alternates to using PS that cost less and can do a good job. Really cool to get in on doing the photo's as the restaurant grows. :-)

This would be a nice "marketing" or "psychology" research subject. Testing on people most appealing images of food: shallow depth of field with focus on one element vs sharp over all. Also images shot from above vs images shot at an angle (from the POV of the eater at the table). May be even someone already researched that. Any comments?

I think the priority is to find a flattering angle, light it well and at an appropriate aperture. I've never focus stacked a food shot but would be interested in seeing the results. Perhaps renting a tilt shift lens would help with perspective and depth of focus.

I like bright cool food images but there is one part of this shot that does not work for me.... the meat. The cool bright works for everything else (even the pork fat and crackling) but to me the meat looks too grey and would benefit from an adjustment brush and a WB tweak.

Everything else (colours, composition, props) look great.
