I have been working my way through my legacy EF lenses and tried the 100-400 IS II with the R6, using the standard Canon EF-RF adapter - it seems to be working flawlessly.

You and I might know that, but I can assure you that there are lots of folks out there who don't have our confidence.
I am on the Canon User Forum and we get lots of queries as to exactly this kind of issue.

100-400II worked great on my R5 and the R... the II was a strong update by Canon - a good way to save some $$ for those looking in the used market

I agree. I do have the RF100-500, but I chose not to buy the RF70-200 as I prefer my EF 70-200 f/2.8 IS USM MkII and f/4 IS USM MkII units. The optics are good and they do not extend when zooming, which is a further assurance against dust getting into the box.
