Serious Q: Why would someone choose Canon over Nikon knowing...

I recently went through this situation. I have a Canon 80D and stayed with Canon primarily due to my lenses being Canon and not having the funds to switch. My first experience with full frame was a Nikon D810/50mm and was blown away with the picture quality (I had a 450D at the time so what would one expect!).
I also had the fortune to work with a long term architectural photographer, Wayne Chasan. He was using the 5DS r with a bunch of L lenses and primarily using the 17mm TE lens - beautiful results! I learned a lot and in conversation recently, he tells me he still uses a 5D MK III and a 6D II for his work! So time and time again I have seen it comes down to the skill of the operator.
I was seriously looking at the R5 but again, the cost I cannot justify so I have gone with a 5DS r primarily through what I saw Wayne achieve with this. I don't do a lot of sport/wildlife photography so fast frame rates weren't important. Watching a lot of review videos and reading a bunch of articles, it has made the decision easier to go the route of the 5DS r.
I'll keep the 80D for video and over time level up on the lenses. At some point down the track I'll probably move up to the R5 to replace the 80D and see where it's at regarding the 5DS r - so cheap too right now!

I think the question emanates from advanced enthusiasts and above category of photographers. And this category generally takes a well considered decision keeping in mind the technological advances, lenses and price etc. A Canon or Nikon will be judged accordingly . As we know both make very good cameras.

Interesting discussion.
Due to my professional activity, I've had my hands on hundreds upon hundred of camera bodies.
Here is what works for me. I use Canon cameras for daytime photography just because I started the hobby long time ago with a Canon camera.
I now have lenses and adapters for Canon and I naturally like the menus and buttons.
Having said that, I use a Nikon camera for astrophotography just because it has a lower noise sensor.
I guess it all comes to personal preference and particular goals.

In the film days, I used a Canon AE-1. Bought it when in the military on a BX payment plan. I was a young trooper with no money but I wanted that camera badly. I still have it but don't use it now that the digital world is here. I went with FujiFilm and don't regret it. Well, maybe one regret, everything is so expensive in the fuji world.

I started with Nikon D300 then D700 after seeing FF having nice pics. I had a full setup from wide angle to zoom lenses. However, for awhile I had seen my friends using Canon with various choices of lenses that made me interested. From that moment I decided to switch to 5D2 then 5D3 until now. Waiting for couple months I will get R5 or R6 then RF lenses later on...

I love nikon system, but I also love canon f1.2 lolz and their auto focus prime lens lolz

nikon lens (entry level) are really sharp & have very nice contrast colour ... you dont need to buy expensive nikon len to achieve decent results

its really up to you which direction you want to head to... but attend some photography workshop will help you to figure out what you need to upgrade & invest

Canon really caught up with DR when they introduced the D80 and 5D4 (I had worked with Nikon D810 files, and felt the same amazement with 5D4 about clean processing). So enter recently.....I've seen some videos about the new Nikon Zfc: love the controls and looks....but damn, every out of camera photo I see from it is so yellow/green. Sure, coming from Canon, I could try to set more presets from WB in camera and software to be more like what I'm used to. Then I also looked up Fujifiilm, and it seems their X series is still the way to go for smaller APS system (not just lens system, but they have great set of color profiles as well).

I agree. I love Nikon but once I started comparing files between the D850 and the R5, it was hard to ignore the green cast on the Nikon files. Easy fix, but still...to my eyes, the Canon files don't require much if anything at all if you wanted to just use them straight out of camera. Obviously that's personal preference, but just my experience. I chose Canon also because their service center is a 20-25 minute drive in Costa Mesa, 35 minutes when it was in Irvine. Nikon before their move out of Gardena/Torrance was easy. I really dislike LA due to the traffic snarl but I've long been out of Nikon since '02. Minolta was in Cypress wayyy back.

If the buyer likes the photographers work that's the main point IMO. Use a tool that provides the results that will please the clients and yourself. Generally we'll be able to adapt though some interactions are easier accomplished with certain manufacturers menus and button placements.

That said, I've had more time with Canon since '05 starting with the 5D-C. I like the Canon look and colors. Little desire to be outside that though I could probably dial in a look in post from almost any manufacturers body. The Fuji lasted 2 weeks here so I would take some exception to that but that system really didn't get long term use to see what could be done.

Twenty years ago when Canon released the new prosumer 300D camera I finally put the film camera (an old Zenit brick) away. Of course over the years I acquired some good lenses and when Canon gave us the 5D full frame I stayed with them. what would be the point of changing brand when you have a bunch of lenses? 2011 I purchased a Fuji X100 and I was sold on their colours and just the whole experience of shooting Fuji. It was not until the XT3 came out that I seriously thought of going further with Fuji. I now have an XT3 and 6 lenses, 4 are their high end ones. It was way cheaper to go Fuji mirrorless and to change over to the R series. I have kept my 5D3 and 4 lenses but I'm close selling it all to further my Fuji collection. The price, weight, built in image stabilisation on newer models and the fact that the XT3 beats the 5D3 in dynamic range has me thinking that I don't need full frame anymore. Loved my canons over the years but no intention of buying another no matter how good they get

Found with Fuji that you have to turn down the Sharpness of the files (I use -2), and that gets rid of the plasticky look you're seeing. Tradeoff is you have to add a little sharpening back in post if you want the best results. I only shoot jpg out of my Fujis, more often than not I transfer files to my iPhone for sharing, edit them using the iPhone, and I add exactly +14 sharpness... 15 is too much, 14 is perfect :-P

Definitely see the green cast in my Nikon files (D500, Z9), especially since I use them to shoot birds in foliage. Easy fix in post w/ the tint slider.

Canon, on the other hand, has always had a red/magenta tint tendency. It used to be really bad back in the 5D2/3 days, where the camera would blow out the red channel if you weren't careful. With the R5, I don't see that as much, and the files are so awesome to work with.

Nowadays, the gap b/w Canon and Nikon is about zero, you can get amazing files out of both systems. All of the DR and AF advantages that Sony and Nikon had have been pretty much erased with the RF mount. More important things to base a system choice on now.

Of the three brands I shoot, Fuji is easily the most fun. The look you can achieve with it is sublimely beautiful (especially w/ the Fuji 35 f/1.4). At the same time though, having shot countless times alongside my wife's R5 + 24-70 f/2.8, the Canon files are a good notch better, they're so clear and lush; the Canon is ultimately the camera we choose if we're shooting for serious.

The thing is though... Canon used to have such an awesome lineup of lenses that possessed a more characterful, old school feel: the EF 50 f/1.2L, 135L, 35 f/1.4L, 85 f/1.2L II... they've completely abandoned any sense of character, instead choosing to compete w/ robot Sony in the pursuit of clinical perfection and winning test chart shooting awards (same with Nikon, they too have some legendary glass). That's why I devote my casual shooting to Fuji anymore, I am more than willing to give up boring clinical perfection, for more character and feel being imparted on my photos. Yeah, yeah, we can always adapt the classic glass, but it'd be nice to see them embrace some artful side of design in future product releases.

One consideration about Nikon... several times over the yeas, their demise has been predicted, their financials aren't great. They are at the bottom of the marketshare list, or very near it. So the longevity of Nikon, as camera sales continue to dwindle, might be something to think about. Will Nikon be around in 10 years? Probably, but they and one other manufacturer are certainly at more risk than the others.
