Finally found what to do with the box of clementines I accidentally left outside my front door when bring in groceries during the cold snap a couple of weeks ago. I found them the next morning as solid as a crate of 6-pounder cannon balls. Put them in the freezer right away till I figured something.

Turns out they make a very nice marmalade. The freezing even seems to soften the skins a little. Made this lot today as a tester - with ginger and cinnamon additions.  :p

That looks really tasty. My neighbor makes marmalade that includes vanilla seeds. I suppose it takes a lot of scraping.

I found an Oystercatcher at the ocean on Sunday. . It's the first time I've ever found one in my life. . Always so fulfilling to find a new species!

So nothing from me, as my vision is pretty wonky.
I had another surgery yesterday and it looks like I won't be using a camera for a few weeks.
I'll get corrective lenses in about 6 weeks. It's pretty frustrating, but getting better. Once
the swelling goes down, I think I'll be better. Right now just walking around is pretty interesting :rolleyes:

It's good to see some new (to this thread) POTNers posting up with interesting contributions. Thanks for playing.

Thanks - and it is pretty good. Going to thaw the rest and do the same. It was pretty easy to make, and my first time trying a jam/marmalade. No scraping in this version as it uses all the pulp. Just washed, cut into small pieces - sections and rind - boiled, and cooked with sugar and spices. Some of the recipes I looked at did separate out the pulp but I think this worked well. No texture issues, not for me anyway.

My typical way of following a recipe is to read a bunch of them - to understand the subject's chemistry (ingredients) and physics (time/temperature) - and then adapt. It usually works. ;-)a

I am so sorry to hear that you are having to go through this.
