However, you could rightly note that there are only one set of straps visible, while a parachute should show a second set straps besides the restraints.

I honestly don't know what safe bailout altitudes are but if you got into trouble, would a stearman get to that quickly? When I think power, I don't think Stearman.. Dan One should wear a chute for aerobatics, but required crew members (such as the pilot) don't need to do so (ref below). What altitude is needed before those parachutes are effective? Is it possible he has an airframe parachute which falls under the type certification in the citation below, so he doesn't need a personal parachute?
