Easiest way is to just let DPP convert the pics to jpegs for you using the camera settings. Then as you get use to the tools start moving sliders around and watch the effect it has on the image.

Also there is a DPP tutorial which does a pretty decent job explaining much of the basics. It's a little old but most of the features are still there

This site is the best source for tutorials that I've seen and these two articles will teach you how to process a RAW file and also will give you the understanding of what exactly RAW is and what advantages you can get from it.

I too shot mostly in jpg, but prompted by everyone extolling the aditional flexibility of shooting in RAW, I gave it a go. I don't doubt that RAW does give you more control, but I found that for the majority of my images the additional control wasn't required, and the additional processing was just a faff.

I have now gone back to shooting jpg most of the time, only shooting in RAW when I know that I definitely will require the extra control.

Get the latest version of DPP from the Canon web site.

For most uses, you want to set your jpeg or tiff to the sRGB color space when you export. The dpi value does not matter for most uses. Some lab printers ask for a specific dpi value (typically 300) but you don't need to mess with it otherwise.
