The 5D shutter curtain velocity is just barely able to eak out a 1/200 sync speed. It doesn't have any "sync headroom"--that is, it isn't a bit faster than marked as the other cameras are. If anything introduces any sync lag at all, you will lose a bit of flash coverage on the image at 1/200. If it doesn't look like you're losing any, you're probably not shooting a subject that shows it.
That's probably why the manual advises using 1/125 with anything other than a hotshoe-mounted flash. That's slow enough to be safe for practically anything.
