I think this turned out very well using the XT with ef-s 18-55 IS. This was taken in a church in Salzburg, Austria.

What other settings are there that I should play around with besides aperture, shutter speed and ISO?

Try different settings of the white balance. If you take a shot using the natural light of an incandescent light bulb, you could set the white balance to tungsten to remove some of the yellow/orange cast. This is if you are shooting jpeg's as in raw you can do it as well in post processing.

I think this was my best shot of the year, a Boat wreck taken at Deal, HDR then made black and white.

How are you getting the night shots without a long shutter (lights having the star effect)?

It was cloudy, you can just see gaps in the cloud if you look.

The shutter speed was 16 seconds, so I doubt you'll get any star movement in that anyway.
