What kinds of documents/samples do you bring with you to the initial consultation with your clients?

Bring lots of confidence and people skills. I only show slideshows on a computer.

The initial consult for me consists of connecting with the couple on a interpersonal level. It is not a direct way to book them. Indirectly, of course!

I will have my sample albums, to demonstrate the quality of whoever I am using at the time. I also have my laptop to go through various wedding sets on the spot and see what type of photos they specifically like (and even look at the photographers they like).

I don't have a contract as I tailor mine to every individual client.

The important thing is to listen to what the clients want.

Couples come to me, it's much easier. I show them a slide show on a 40" screen, a few sample albums, but mostly I talk to them. I recently talked to one couple for a couple of hours at our first meeting. They take away a price list, sample contract, terms and conditions, and my professional associations code of ethics, all printed on nice paper and packaged up in a nice bound folder, all up cost a few dollars.
