Changing an unwanted photo background

Hi all, this is my first post on these forums so sorry if it is a bit basic! I have a reasonable quirky closeup of a swan which I took recently with my newly acquired Canon 40d. The background is ok - it's grass, nicely out of focus for the closeup. I want to experiment though with creating a dramatic mono colour background - probably black. It's going to be very difficult to make an accurate selection of the swan feathers. Is there another way to do this? I have a feeling I can select pixels of a certain colour and then alter the colour? Really grateful for advice.

Sorry - forgot basic info! I have PS CS (on my Mac), PS CS3 on my work pc, and an early version of Ps Elements on my Mac too. Thanks for getting back so quick!
