I just got my Canon 7D and was wondering if I could get some info. Wondering how to set f/stop and shutter speed also on the display what do the different numbers refer to? Any help would be much appreciated.

Get to a bookstore, or library and find a book called understanding exposure by Bryan Peterson. Its the absolute best source for those questions. Its not that I'm not trying to be helpful by giving a fuller answer, but you've asked more than can be done in a simple answer.

What gonzogolf said. In case you don't want to go the library/bookstore or simply want to get started right away, there's a great resource on the forum ... right ... here:

First of all it's nice to see how helpful everyone is to new users. It's funny you all suggest "Understanding Exposer". I was at the bookstore the other day and picked it up because it seemed very insightful. I must be on the right track haha.

Most of your questions about how to change shutter speed and aperture, and what the "numbers on the screen mean," can be answered by reading your manual. (If you don't have a print one, you can download it as a pdf here (external link), I think.) Starting on page 95 it will explain the exposure modes.

forget the manual.... it's complicated to understand if you're just starting out.
Understanding Exposure's a great book!!! i'm with the others. use that... when you get a little more advanced, watch Zack Arias's One Light Workshop
