Jen, Lightroom is as easy as falling off a log... except it doesn't hurt as much..

Seriously, Lightroom is a *really* powerful piece of software. I am only beginning to scratch the surface and learning it - but the great thing about it is that the workflow is very intuitive and straightforward. Get Scott Kelby's book (or borrow it from the library), or better yet, watch the myriad Youtube videos on Lightroom workflow. All adjustments are made using sliders that are straightforward to use. Even though I own an old copy of Photoshop Elements, I don't really have any experience with it, but I couldn't be happier with Lightroom.
+1 for lightroom... a worthwhile and relatively cheap photography investment. With educational discount it was only ~$100 AUD (cheap compared to the cost of most lens).
Shooting in RAW, it can turn an poorly exposed image, into something decent. There is a whole thread dedicated on what it can do:

Having said that, there are somethings that can't be done as well in lightroom and photoshop or other plug-in are required. lightroom also helps to keep your images organised.
