I'm trying to Import some RAW Files I just took, and I get prompt on LR3 saying

" The file is from a camera which is not recognized by the raw format support in Lightroom ".

Can someone shed some light?

No. The original poster needs to update their version of Lightroom to version 3.2 or later (the current retail version is 3.3 and there's also a 3.4 release candidate).

Support for Raw files from the Canon 60D was added in Lightroom 3.2.

Considering that "camera profiles" are not frequently updated....draw your own conclusions.

Let's keep going then! LR has been known to be updated to support camera profiles...update so your camera profiles are there.

Post #3 says it all really

But 'hello people' is absolutely right. What is the difference between a newer version that supports Camera X and an older version? It is that a folder for X has been added to .../AppData/Adobe/CameraRaw/Profiles/Camera. The profiles for each camera may have the same names, Standard, etc., but they are unique and different for each model and LR determines from which folder to load them by reading the Exif. If LR can't find a profile folder that matches the camera name, it shows the "unsupported" notice.

So how do I update the camera profiles without installing the entire new version? That would certainly be much simpler than wasting time and space downloading the new version.

It certainly would be. But Adobe isn't likely to cooperate. Have you ever had a look in that folder I cited above? Almost 64 MB of profiles for every Canon, Nikon, Sony, Panasonic, etc., etc., etc. 64 MB isn't a big deal on a modern computer with a Terrabyte HD (two and a half RAW files from the 5D2), but back in the days when HDs and photo files were smaller you could free up a bit of space by trashing all of them except your model.
'Course updates are likely to contain bug fixes, declared and undeclared, too.
