When I get really hungry and completely run out of imagination, I always keep a supply of frozen tamales in the freezer just for emergencies. I actually had a couple of them out of the bag and on a plate ready to pop into the microwave this evening when I came to my senses. Instead, I had a piece of the quiche I made a couple days ago. The tamales are back in the freezer where they wait to be called into service should an emergency arise again someday.

I love homemade tamales.

My grandmother used to go to Mexico every holiday season between Thanksgiving and Christmas to visit her sister and also bring back several orders of homemade tamales from a lady that would sell them for a living....I'm talkin' like 20 dozen tamales. Which of course would be eaten up by the family during the Xmas get-togethers. my favorite ones the lady would make were white masa, filled with chicken and instead of being wrapped in a corn husk, they were wrapped in a large spinich leaf. So you ate them whole, spinich wrapping n all. They were delicious! I'd ask my grandmother to buy me 3 dozen each time she went.

Mmmmmmm. Sounds wonderful!! We've made many wonderful Mexican friends here in the desert, and a few of them know of my fondness for Mexican food, especially tamales. I've had just about every variant you might imagine. The most unusual had cranberries in the masa. The color was unusual, but just a touch of sweetness made it truly delicious.
