Mmmmmmm. Sounds wonderful!! We've made many wonderful Mexican friends here in the desert, and a few of them know of my fondness for Mexican food, especially tamales. I've had just about every variant you might imagine. The most unusual had cranberries in the masa. The color was unusual, but just a touch of sweetness made it truly delicious.

That sounds good....I wonder if I can convince my grandmother to add cranberries just to try it out. She makes them now that she no longer goes to Mexico.

Oops, sorry...they were Taco Bell too.

.....this. I love tacos and lots of other Mexican food. We make it all the time. Taco Bell is so bland unless you use their sauce which is not that great. Plus, I maybe weigh on the north side of 200, but I am a lightweight compared to most of the patrons there.

I love homemade tamales.

My grandmother used to go to Mexico every holiday season between Thanksgiving and Christmas to visit her sister and also bring back several orders of homemade tamales from a lady that would sell them for a living....I'm talkin' like 20 dozen tamales. Which of course would be eaten up by the family during the Xmas get-togethers. my favorite ones the lady would make were white masa, filled with chicken and instead of being wrapped in a corn husk, they were wrapped in a large spinich leaf. So you ate them whole, spinich wrapping n all. They were delicious! I'd ask my grandmother to buy me 3 dozen each time she went.

Mmmm.....now those sounds great. I love the spinach leaf idea.

Hey!!! A Snake 3fer.

I like to eat Taco Bell ONLY when I have a craving for their style of taco with the Fire hot sauce...just makes that unique twang. Otherwise, it's various different local restaurants for me with "estilo jalisco" Mexican food.

I've never had taco bell, Mexican food is something that I think I would like a lot, but have never had much of.

Well that's something your going to have to change ;).

Although, out of all the areas I've been to and had Mexican food....nothing compares to the food that can be had here in South Texas. Although, I didn't get to try a Mexican restaurant in California when I went to San Diego and Los Angeles. I bet San Diego has some good hole in the wall spots with some great Mexican food.

My absolute favorite Mexican restaurant is a dreary little hole-in-the-wall in Indio (it backs up to the railroad tracks). The food is amazing, and relatively inexpensive. Maybe it's not Taco Bell cheap, but the two of us can eat for less than $20.00. Can't do that at Denny's.

Can't imagine why not. It's just about everywhere. I think you should go out and have a big chimichanga somewhere, then come back and give us a full report.

I agree...the hole in the wall type places are usually the best ones and relatively inexpensive....so long as they are not too popular.

CPS members may have seen this in their email but I thought I would share for those that didn't.

"We at Canon extend our heartfelt condolences to all those affected by the March 11 Japan earthquake, along with their families and loved ones. We pray for the safety of everyone in affected areas and hope that the region will soon complete the rebuilding and healing process.

Immediately following the earthquake, Canon Inc. launched recovery activities spanning development, production, and sales operations through a collective effort across the Canon group.

Currently, Canon USA has appropriate inventories of most service parts, and CPS repair operations are functioning normally. However, in the near future, certain camera and video service parts may become temporarily unavailable pending recovery efforts. If this occurs, it may be difficult to repair products within the standard CPS timeframes (for each member level). Additionally, loaner equipment may become unavailable as a result of increased demand.
Please accept our sincere apologies for this inconvenience and be assured that we will continue to use our best efforts to give your repairs our highest priority according to your membership level. In the event a repair cannot be completed in a timely manner due to lack of parts, we will work as necessary with affected members on an individual basis.

We will continue to evaluate our inventory and production situation and ask for your patience and understanding during this trying time. We at Canon truly value our relationship with you and we are working hard to minimize the impact of this disaster on our customers.

Sincerely,

Yuichi Ishizuka
Executive Vice President and General Manager

We had a gringo hack of a mexican favorite: chilaquiles tacos. (shredded chicken, spices, eggs, green chilies). I made homemade costenos sauce (chipotle peppers and sour cream).

HOLY YUM.

I LOVE chilaquile tacos! That is what I order when getting breakfast tacos at a local drive through joint. Though the chilaquile ones are made a little different here.

Onion, diced or sliced jalapenos, diced tomatos, cheese and crispy tortilla chip strips scambled with eggs....and of course topped off with some hot n spicy salsa in a big 'ol handmade flour tortilla that still has the powder on it after it's been cooked :D

LOVE those home made flour tortillas. YUM!

We usually make corn tortillas from scratch, but didn't have the time tonight. The costenos sauce makes up for it though.

On a side note, that may not be the 'correct' term for the sauce, just what I call it.
When I worked at the Mexican restaurant, we had a dish called Tacos Costenos. One of my ultimate favorites.

Shredded beef, onions, spices, sauteed till yummy, on a corn tortilla. Generously doused with a yummy sauce made from Chipotle peppers in Adobo sauce that had been blended with some sour cream.
The sauce is AMAZING, and easy, and I don't know why I don't make it more often.
