Although, out of all the areas I've been to and had Mexican food....nothing compares to the food that can be had here in South Texas. Although, I didn't get to try a Mexican restaurant in California when I went to San Diego and Los Angeles. I bet San Diego has some good hole in the wall spots with some great Mexican food.

We are very fortunate to have a great Mexican restaurant near us. The family immigrated from Mexico about 15 years ago, and since has brought just about every relative possible with them. Great food, stuff you don't get in your 'average' Mexican restaurant. A very friendly bunch too. Oh, and LOTS of good tequilas on the menu too. :p

When I worked at the Mexican restaurant, we had a dish called Tacos Costenos. One of my ultimate favorites.

Shredded beef, onions, spices, sauteed till yummy, on a corn tortilla. Generously doused with a yummy sauce made from Chipotle peppers in Adobo sauce that had been blended with some sour cream.
The sauce is AMAZING, and easy, and I don't know why I don't make it more often.

I don't recognize that term myself, however, a quick google search did show some pictures and I think it is similar to whats referred to around here as tacos adobados. A red colored sauce made from adobado chillies and other spices sauteed with the choice of meat and onions then sprinkled with cilantro.

And they haven't turned into icicles yet?! :lol: Big climate change from them. What style of food do they make? I like jalisco style (from the Mexican state of Jalisco) instead of the "tex-mex" style around here.

Does Totopos Compuestos al estilo Jaliscience fit the bill? If so, please interpret for me. I don't know most of what is written on their menu, just that it all tastes good. Even the most basic stuff tastes different, and better, than other places offering Mexican food.

I don't know if it's still there, but one of the most memorable mexican meals I've ever had was years ago at a place called Little Anita's just outside of Albuquerque, NM.

We do mexican about once a week here. Sally makes the salsa from scratch. I just bring the Padron tequila. ;-)a
