I had the opportunity to volunteer my time taking pictures at a charity tennis tournament my friend organized. I managed to get what I think are pretty good shots for not shooting sports before. The only thing I had difficulty with is properly exposing white shirts. Several players wore white shirts and they all ended up slightly overexposed when I was shooting in sunlight. Basically when the white was properly exposed the background was dark, and when the background was properly exposed the shirts were too bright. I wasn't able to satisfactorily correct this with the RAW tools in DPP. Are there any in-camera adjustments I can make when shooting that avoid this, or something I missed while trying to correct in DPP?

You could post some of the photos here or if/when the thread is moved provide details as to your camera settings

This is un-modified, all I did was convert RAW to jpeg. Settings:
Shutter: 1/800
ISO: 640
Aperature: 5.6
Metering: Center-weighted average
Focal length: 55mm

I was in Tv mode and using only the center AF point. I had better action shots, but this was a good example of his shirt washing out. One person had a neon colored shirt and I didn't even try with those. Let me know if I need to post any more info, I think I got everything relevant.

Use AV and toy with higher and lower apertures. if you meter off of his shirt you're going to generally get a darker exposure outside of that.
I would think f8/ 1000th / 1000iso might bet you a better result but its one of those things you have to practice until you get a better feel for things turning out how you want

I generally use AV and spot metering with highlight selection on and spot metering
between looking at the flashing highlights and the histogram you can get a pretty good idea of what adjustments to make to acheive the results you want

Do you mean ISO 100, or 1000?

And I don't have spot metering on my XS. My only options are center weighted average, partial, and evaluative. I guess that's the next thing I'll really read into.

I was shooting in Tv so I was only controlling shutter speed for the stop-motion. I guess the next step for me would be to move into full manual, pick a shutter speed and aperture, and let the camera pick the ISO.

Well, white is white and always looks overexposed in bright sunlight. Here is one I took last year with more or less the same look.
