Flash or Reflector for a Beach Wedding

I have a beach wedding coming up. I'll be joined by an assistant, but not my usual and she's not yet well trained on controlling my 580's which will be working in M. Nonetheless, she's either a walking-talking light stand or a good reflector holder. I'll be doing portraits during the 5:00 or so hour so the sun is still pretty high. Thoughts/opinions on which is preferable, off-camera flash or a reflector?

Important question to go with your 5:00 hour... Which coast? Living in Florida, Tampa vs. Daytona at that time of the day has totally different methods..

East coast, but facing south so the sky is actually fairly open.

I vote flash but only because I can control my lighting intensity and direction better with it than with a reflector where it seems that I have much less control over intensity.

I'd go reflector (or possibly a diffuser). 580exii vs bright sun + bright reflecting beach.. The speedlite will lose everytime..

Also, I wouldn't be afraid to blow out the sky a little. It's outdoors, it's bright, it's the summer, it's the beach. It doesn't have to be lit like a 18% grey studio.
