I have an XTi and I'm planning to get a 7D soon with the 15-85 IS, but Ive also looked at the Pentax K-5.

Pentax Strong Points:
Image quality (better than the 7D in the review i've read)
Better high ISO IQ
Weather sealed (77 waterproof, dustproof seals)
Construction (magnesium alloy over a stainless steel frame)
In-Camera IS (Horizontal, Vertical, and Rotation)
Dynamic Range

Canon 7D
AF
CF Cards
Lens choices
Ergonomics

I don't know if the 7D is really worse in terms of IQ, and if it's (fully?) weather sealed like the Pentax,

Indeed, the Pentax does have significantly higher image quality than the 18MP Canon crops. It also has a less-severe 1.5x crop factor and full weathersealing.

The 7D is decidedly NOT weather sealed. It's better than the Rebels or 5D series, but definitely nowhere close the Pentax cameras or Canon 1D series.

One thing to keep in mind is that although the K-5 may be nicer in IQ, the 7D has somewhat faster AF (not quite as good at tracking, but faster at initial lock which is pretty important) and a much larger community of users (see this forum) and therefore more market for lenses.

I also give the 7D the advantage for movie mode and live-view implementation.
