question about reflector grids

The only grids I've used so far as softbox grids. Can anyone tell me more about reflector grids. This kit (external link)has 20, 30, and 40 degree versions. What does that actually mean? Is there a single general purpose grid I can use?
This would be for my Genesis 200 background light.

Could you use a grid on a hairlight in lieu of a strip box with grid that I've been using? What kind of a difference would I see?

5D2, 600 EX-RT, STE-3, 24-70L, 70-200L f/2.8 IS II, 50 f/1.4, 85 f/1.8
