From what I've learned while researching lens, your IQ isn't always consistent throughout your entire focal length, especially on a larger telezoom.
I came across this while I was deciding between the 70-200 f4L USM and the 70-300 USM IS. Oftentimes, a cropped image of the L glass was sharper compared to the end of the 70-300.
The other reason the 500mm photos aren't as good is because of handshake blur. The longer your focal length is, the more susceptible it is to handshake (or any other kind of vibration).
Your 55-250 has IS, while your 200-500 doesn't have VC (Tamron's IS). Even at 200mm, at a slower shutter speed the Canon will have better IQ/sharpness than the Tamron. At fast enough shutter speeds it won't matter.
Try a test on non-moving subjects. Have your camera mounted on a tripod and then do shots of a stationary subject. You'll notice that the IQ at 500mm should be about as good as a cropped 200mm.
