Still learning my 7D and only have right now an 18-55mm and 75-300 until I purchased the "nifty" a couple of weeks ago and even had family members notice how much sharper the photos looked. This is the very first one I took with it of my great niece.

iirc you can stop down by:

mounting the lens properly in the bayonet mount
clamping down the aperture in M or Av modes
depressing the DOF preview button
while holding the DOF preview, remove the lens from the bayonet mount

now the iris will have the smaller aperture. to change it, repeat the process.

(obviously a fully manual lens would be "better" for this.)

That's correct.

I'm pretty sure I shot those at F11, and off camera flash.
