I have always not been very good with "super" photoshop I call it.. lol..

I really would love to learn how to do this:

Its easy if you know how to do it. ;)
Personally I don't think the example you linked is all that great. The edges of the horse are sharp; as if the person who did it just used the Pen Tool to cut the horse out of the original photo.

Why not post an example of a photo and let others here demonstrate how its done. There are tons of ways to mask - and more importantly - to select various elements in a photo. It would be much simpler to describe what is done to a particular photo than to discuss all the possible ways of selecting and masking.

Got PS? There are Layer Masks & also Adjustment Layers which have a mask built in. Both are very powerful tools.
For instance, you can level out the exposure using a selection & a Layer Mask. Links: PS, see post #9; PS Elements in Post # 14 A question about sky and click on the Airport runway shoot link in my post.

Doing it is easy, doing it well is not.

In the example you provided, probably the pen tool was used.
Would probably work for your image as well.
In both cases, far from ideal if you want it to look realistic: You need to think about it before you shoot the image.
