Despite a using a gray card to calibrate my camera, I seem to "occasionally" get gray skin tones due to improper exposure, obviousely. Sometimes I get lucky in PS with fixing it, but never find a sure fire way. Any tips?

Here is a photo for you to play with to see what I mean. Please explain what you did, thanks :D
please excuse the tilt :) this was a complete "Oops" shot, and I literally was falling over a huge rock as I took this haha.

It certainly would help if you posted a larger image with the original color profile embedded.

As Chris A demonstrates Curves is one way to go but I wouldn't use such a brute force method. Instead I'd use the Select > Color Range command to select the skin only, then click on a Curves adjustment layer. This will automatically reveal just the skin and mask off the rest of the photo. From there its a simply matter of adjusting the individual RGB curves until you remove the color cast and get something that is pleasing to your eyes.

Set photoshop to open JPEGs in camera RAW. Then you can just use the temperature and exposure sliders to warm and brighten the shot.

Here is simple use of Color Balance adjustment, along with Brightness & Contrast adjustment, in Paintshop Pro.

Or using a real PHD one automagic button, 'One Step Photo Fix'...

Use curves and set the black point on her dress on a curves adjustment layer. Then you can fine tune it from there if you want. Maybe increase the Vibrance a little.

This image was very under exposed, and the white balance is off (probably due to all the green in the image). Here's what I did using Lightroom with "linear" tone curve.
