Best paper for homemade photo book?

Can someone recommend a high quality inkjet photo paper that is thin enough to make a photo book out of. I want to bound multiple prints with thick covers, with brads on the left side to secure them down.

I use Epson papers but they are too thick. I don't think they will bend easily when the viewer is flipping through the pages.

I've narrowed it down to

1. Innova Opus book with Art photo smooth cotton paper 2 sided
2. Moab Chinless photo book with Entrada rag bright paper 2 sided
3. Hahnemuhle leather album with Photo rag duo paper 2sided

I guess it's not the paper thickness that's important for book art but rather the cotton base
