The 5Dc is such a classic, very "film like" images that hold up to a lot of post processing very well. The 60d files have almost the same quality - especially the noise pattern at high iso. IMHO, you are better off with a 5dc + 7d than a single 5dII. The 5DII from still image making perspective is not much if any better than a 5dc. In lower ISO, the 5dc delivers more pleasing quality than the oft over saturated images of a 5d2. What you get from the 5d2 is the modern niceties. But for pure still image taking, the 5dc with its film-like images is a tough act to follow.

Both the 5d and 5d2 share the same AF system meaning, if you plan to shoot action, you are hooped. This is when your 7D steps in and get the job done. The 7d is totally a different beast as a fast crop cam. The customization options for this camera is impressive. Think of it as a 1dIV in a compact body.

Have you tried OCF? It's real fun. 7d's built in flash commander is really handy.

Redundancy. 2 cameras >>> 1.

I've now got a 5D MkII to go with my 7D. I got a 24-105 f4 L to go with it and took it out for the first time today. Excellent camera and lens.
