Can a standard j-peg image be manipulated using software? I appreciate raw shots hold more information and can be adjusted more, but just want to ask solely about j-peg please.

Yes, jpegs can be worked with. Raw files have more "latitude", but especially when you are getting started you can do a lot with jpegs. Learn the "stuff" with whatever software you have. In time you will get a feel of things, and be able to decide for yourself what you need to get the best results.

Yes, but since the file has already been compressed, there is less information to work with, and subsequently less that you can accomplish.

Start with Canons DPP. Free and pretty basic so it is a good place to start learning.
