5D & 7D (both gripped), 24-105L, 100-400L, 15-85, 50 f1.8, Tamron 28-75, Sigma 12-24, G10, EX-Z55 & U/W housing, A1+10 lenses, tripods, lighting gear, etc. etc.

1200 isn't marvellous but it's not too bad. You'll just need to carry a spare battery or two - which explains the reference above to a coming shortage of batteries.

Depends on shooting, flash used etc...It's probably closer to 600 with my habits. I've never let it fully drain, at least not until I get a second one.

Does the grip for the D800 just allow for two batteries, as normal, or have they found a way to squeeze three in?

If those are 100% crops, then the D800 would have been placed further from the target to cover the same subject area with the same number of pixels - therefore, it is being viewed at a higher magnification.

To get a fair comparison, you'd have to shoot both cameras at the same distance, then either upsize the Canon shot or downsize the Nikon shot, so that both are being viewed at the same magnification.

To make it even fairer, you'd use the same lens on both - say, a Zeiss 100mm f/2 Makro-Planar.

Half that is true (both will be worse). Canon's in-camera jpeg processing applies contrast, sharpening, saturation. These are in-camera enhancements, so they are "improving" on the base Raw file image quality. I'm sure the Nikon is doing it as well, but far less effectively. If I shot in jpeg, I would prefer Canon's results better. From my own analysis examining the Raw samples from both cameras confirms your own statement...the difference is very difficult to discern. Only when shadow areas are adjusted brighter by several stops (ridiculous levels) does the D800's better DR show with less noise.
