Curious about Camera Color Mode and White Balance

I recently got a Powershot S90 and am still getting familiar with all it has. If I'm taking a custom color temperature reading off of a white card, should I set the in-camera color mode to Off so I get the most accurate colors?

I'd turn the color mode off, shoot a calibrated neutral WB target and set the custom WB per the camera instructions using the target image.

It never hurts to set a custom WB as you asked. Sometimes I'll just use a pre-set WB. Can you do that?
Accurate colors are good for a starting point, but some images look better on the warm/cold side.

In a book I'm reading, "Understanding Exposure," the author says that he almost always leave the white balance on his DSLR to Cloudy because it adds some warmth.

It's kinda the antithesis of Canon though, I don't know about Nikon.
