Canon 5DIII AF menus

I am headed out tomorrow to shoot some wildlife. It will be in a fairly controlled environment, with the subjects to be anywhere from close to a few hundred feet away, in natural habitat. As far as I know, none of the subjects will be on a fast run, but the do move around, sometimes erractically.

The fastest subjects I have shot for most of my experience are wind blown trees. :D

In the new AI Servo 1st & 2nd image priority, should I set it for Speed (shoots pretty much whether focused or not - Equal priority - will slow down the shutter actuation, but tries to combine speed with focus) - or Focus which tries for good focus and may slow down the actuation?

I plan on being in AI Servo.
This opportunity comes my way about 1 time per year.
Should I skip AI Servo and the settings and just shoot 1-shoot, since I have little experience and no time to practice?
The weather is going to be on and off Rain, around 70F. We only have a few hours to shoot.
I will be shooting the 5DIII, 24-70, 70-200mii, and I will bring my 1.4 extender & 400mm f/5.6. I will be using my Shoulder bag which I have quick access to and can change lenses without having to put items on the ground.

Any other advice would be very welcome.
