newbie w/ question about B&W

I have the digital rebel xt and basically I always shoot in the green rectangle :o although I do want to learn about using the manual modes - I've got a lot to learn.

My question, how do I get black and white shots? Would I use the photo editing software? If so, I have the following and don't know how to get the best B&W quality in any of them: Photoshop 7.0 and Digital Photo Professional 1.6.1 and the ZoomBrowser but I don't think you can edit much with that one.

Any help is much appreciated!!!

Try Av - it's semi-automatic. Don't worry about full manual for now, there's no need to start with.

I take everything in color and process to B&W in photoshop. This book (external link) will tell you how :)
