Grammar is important too. Jack should be capitalized, denoting a person.. which would kill a little of the humor, in this. Thanks for the laugh though. :D

I am, by no means, an English major. However, I believe punctuation includes
capitalization and therefore, the sentence is written thusly -

"I helped my uncle, Jack, off his horse," Icopu said jerkingly off handed.

Yep, the sentence seems like it's perfectly fine; no extra punctuation really is necessary..
