Can my 60D trigger (wireless) my 580EX (not a II) with the flash off the camera? If not, can it trigger a 580EX II?

Yes. The pop up flash used as a master on the 60D can trigger the 580 I and II, as well as any other canon flash that uses the light pulse system.

Read the link in my signature for a tutorial about using Canon's wireless flash system.

Make sure the 580EX is in slave mode.

It works on my 550ex, so a 580 definitely will. Its really easy to do, only problem is the range isnt the greatest unless its a really low lit room. I will probably be getting a 580ex ii to use as a master at some point instead. That or the canon transmitter thing. Cant recall the actual name for it off hand lol

yes, i also have a 550ex and it works really well, but you do need to enable the function - have a look in the user manual has a good explanation on how to set up

quite a variety of settings

Shutterwolf - ST-E2 ..

There is also a yongnou version of the ST-E2- uses AA's. cheaper and supposedly a bit more versatile. Beyond that- you need to go with a 580 EX II for a little more range/flexibility, or go with a third party wireless ( radio ) system - like a Pixel King or such.
