Another vote for Rallying.
I have sat in a rally car (with the guy currently in 2nd place in the ARC) going pretty quickly through a test stage (well as quick as you would be comfortable doing with a couple of grands worth of camera strapped to the bonnet - we topped out at about 170kph (a little over 100mph - on ball bearing gravel) the skill taken to thread a car at those speeds through a forest is incredible, although the cars are amazing too, incredible acceleration on gravel, loads of grip, and they soak up the bumps really well too
I do like an Aussie circuit class too - the HQ Holden's
the drivers don't seem to grasp how big the cars are, and also miss the point of "no contact"
That coupled with them all running the same tyre/engine/brake/gearbox package - means they don't spread out very much over a race (a typical 10 lap race and they are spread out over 1/2-3/4 of a lap) which makes them great to watch as they bounce of each other, and try to go round the corners 3 or 4 wide.
they are the slowest thing on four wheels though
