Simple question.

Right now, I only have a 430 EX II and a 60D. I'm clueless as to where I should begin, and I'm wondering how others began their own journey with strobes.

Note there is a 102 as well as a bunch of 'on assignment' posts too. He concentrates on off-camera flash, which your current equipment is capable of, but most of the technique discussed is generic to flash in general. Don't overlook the user comments or the flicker group.

There are a few important concepts that you need to understand first. Start with Flash Photography 101 (link in my signature).

Have a read of the link in my signature. I've got a tutorial on using manual flash as well as a tutorial on how to set up wireless flash, which you can do with the equipment you've got.

Start with curtis' info links and spend $400.00 and take a class from Don Gianatti,,,best lighting guy in the business as far as im concerned. If you can get into a weekend hands on class with Don,,, Do It. The man is a genious. Lighting is very basic,, but you have to know how the equipment works and how to see the light. Curtis has some excellent information on his links. Don has his stuff together.

Look up Mark Wallace's videos for Adorama TV on Youtube. That really helped me out getting started.

Oh, and one more thing: Is it wise for a beginner like me to keep the Canon flash? Or would I be best served with a couple of dirt cheap Yongnuo units?

Ok, you're crazy.

Reading the manual is important but it won't teach you squat about the concepts needed to make pictures with flash.
