I do HDR's without a tripod all the time, I just put it in high speed burst mode and snap 3 bracketed shots in a row. 60D is plenty fast enough to get the photos together, just need a somewhat steady hand.
Isaac if you have both Lightroom and photoshop and wants to do a quick HDR out of one image in LR you can make 3 virtual copies then edit them to photoshop with HDR then few more steps in photoshop. That is what I do if I like a subject to try for HDR. But of course as much possible I like to so HDR on site with a tripod sometimes handheld.

I have done HDR with no tripod as well and I did try to bring back the sky using both programs but the the sun was in the direction where I was shooting sky was almost washed out originally. There will be another time I will hit this place again and I will be more prepared along with more time I got there around 4pm and started driving up around 430 pm and the sun was sinking fast. I had to cover a 32 mile strech stopping at several stops and try and enjoy the scenery with available light. By the time I got the the highest peek of the highway. The sun as you see was behind the mountain and the view was just a huge shadow.
