Need to resize for canvas. Help, please!

Hello all. I am wanting to get a canvas print done, but there is a problem:
The main subject goes clear to the edge of the frame, and I will lose an inch or so on the edge of the canvas.
Can someone walk me through the steps of how to add a good looking border? I have Photoshop Elements 10. (and GIMP, but I figure photoshop will be more useful)
Looking to print at 16x20.
Here is the picture I will be using: (sharper in real life before it was compressed by Razzi)

Use the Crop Tool. Create a crop box of any size and shape anywhere on the image. Next, drag one side or corner outside the image (a necessary step; you can't initially draw the crop box outside the image, but you can drag it there once created). Resize the crop box so that it extends outside your image on all sides by the amount you desire. Click the OK check mark.

You may need to zoom out first to have enough room to extend the crop box. Either Alt-click on the image with the Hand Tool selected, or press Ctrl-[-] (Ctrl-minus sign). Also, turning on the Ruler (Ctrl-Shift-R) may help to get the dimensions right.

I would do mirrored borders. I haven't had Elements in a while, but I think the steps are pretty similar to CS5.

Go to Image - Canvas Size. How large are the stretcher bars? I would enlarge the canvas by two times the width of the bars plus one inch. So if the bar is 1" wide enlarge both height and width of the canvas by 3". If the bars are 2", do 5" and so on.

Then use the rectangular marquee to select about 1" of the image starting from the edge. Zoom in and make sure the marquee is grabbing the first pixel of image. Right click and do a "Layer via Copy."

Select the "Move" tool and grab the inside edge of the copied inch. Drag it out to the edge of the canvas so that you have a mirrored border.

Merge your layers and do the next side. Repeat until you have 4 mirrored borders.

I hope this is helpful!

It might look a little funny as an entire image, but I do hundreds of these at my job and once stretched and on the wall they look really good.

Heres what we mean, I've left white edges only to emphasise the edges.

Thanks for the help! Turns out that the machine I will be using can do mirrored edges by itself, so I don't need to worry about it.... But now I know how if I ever need to!
