Is it better to buy these in sets since a person will use a different ND filter at different times during the day depending on the light?

or should I buy these individually and only get what I want?

Basically im thinking of buying an Einstein light sometime soon and testing it out at full power during mid-day to overpower the sun and create some cool effects.. how many stops ND filter would i need approximately if i'm shooting at lets say f/2?

I assume you are referring to graduated ND filters?

If so, yes. Its wise to carry a set of these and I carry 0.3,0.6 and 0.9 filters (1, 2 and 3 stop). For holding back the sky I was advised to meter the sky, then meter the grass at my feet and select the grad that equated to the difference between the two. This can often mean I need two of my grads to achieve maybe 5 stops. To "overcome the sun" you will need some pretty heavy duty grads.
