5dmk3 question - registered AF points

I know it has separate registered points for vertical and horizontal shooting positions. Can I assign some button so that when I hold it, it always uses my home button for AI servo mode?

On my old 1dmk2, I would use center AF be default and then if I needed ring of fire while still in AI servo mode, I would let go of the * button and instead hold the Home/WB button (left of the * button) and camera will use all AF points.

Can I do similar with 5dmk3? I am going through the manual but so many options so hard to get used to them in a day or so.
