When you use an IR remote control like the RC-6, it's true that you need to set the camera to self timer/remote control drive mode.
But note the slash (/). It means it's self timer if you use the camera's trigger button, but otherwise will receive commands from the remote control. So if you actually use the remote, then there's no self timer active. It's just the same setting used for two different purposes.
So when you use the RC-6, it will either take the picture when you press the button, or two seconds later. If you use the camera for video recording, then having the remote set to instant means it will trigger still photos taken, but if the remote is set to 2 seconds it will instead start or stop video recording.
The remotes connected by wire are nice for other purposes, but couldn't control video shooting until with the very latest cameras.
