If I take a framed full image with a 7d then take the same subject from the same position with the 5d; what will be the IQ differences when the 5d image is cropped to be identical to the uncropped 7d image?

No, it'll be worse because the 7D image will have higher resolution and sharpness. The 7D compresses a similar amount of pixels into a smaller area. Canon 5D Mark III - Leica M240

A cheap hammer will drive a nail just a well as an air gun. Drive lots of nails with a cheap hammer and you'll be looking for a better tool pretty quickly. :p Gear
