I have the DOF preview button assigned to engage AI Servo. Takes a little getting used to in the beginning, but I got used it quickly, and now it's to a point where it's automatic. This is a great way to temporarily engage AI Servo without messing around with buttons and dials.

IMO, this is the best custom control introduced in the 5D3. Makes switching back and forth so simple.
