Can the 5dMKIII in camera HDR allow you to use shots that are greater than 2 stops up or down of each other ?

Yes, the 5D3 in camera hdr can bracket up to 3 stops spacing (-3, 0, +3).

Using AEB with the 5DIII, the number of bracketed exposures can be set to fire 2, 3, 5, or 7 shots automatically. The spacing between each exposure can be as much as 3 stops. So, if you set the 5D3 to 7 exposure bracketing with a 3 stop spacing, it would look like this: -9, -6, -3, 0, +3, +6, +9 for a total of 18 stops. Personally, I can't imagine a scenario that would require that much spread. I typically us either a 1, 1.3 or 1.6Ev spacing when I shoot 7 exposure AEB.
