Taking the camera body features as primary consideration is being shortsighted.
Look at the camera system (and the after sales support in your locality) to base the decision.
Bingo.
Camera bodies come and go, but glass is forever, and support time can matter to some people. Maybe not a hobbyist, but a pro needs short repair times, something Canon excels at.
Now, that being said, I'd have to give the nod to the D600 if we're comparing the setups you're describing. I've shot and owned multiple Canon and Nikon systems so I'm pretty familiar with how they render photos, etc.
At total lens selection, it's Canon by far. They've got stuff Nikon just doesn't have, though Nikon's line of f/1.8 primes is pretty nice. Take this into consideration that Canon might have something you want that Nikon doesn't make.
Skin tones (and color in general actually) - I prefer Canon. I loved my D700 and D7000 cameras, but all of the Canons just render skins and greens better than the Nikon cameras do. Some people say you can tweak this under software using something like an X-rite to profile the cameras, which I own, but there's still a different "look" about it all, and I prefer Canon's rendering.
Sheer technical competence of the D600 vs the 5D2, D600 wins. 5D2's autofocus is fairly poor, though the center point is good and if you know what you're doing, the outer points aren't that horrible.
The D600 blows the 5D2 away when it comes to dynamic range, though, which can be really important when you go to recue a photo or simply during post processing. A huge boon.
I say this as a completely neutral party - I shoot m43 now 
In the setups you describe I would go with the Nikon, but if all the other parameters were factored in (cost, glass preferences, etc) it would be hard for me to pick a real winner.
