I'll be there tomorrow with my girlfriend, and my 20d. Any suggestions on what I should shoot specifically? Any requests?

Basically any input would be helpful. After I get back, I will post my results here.

Been there three times and see something new every time. Just shoot everything in sight and toss the junk. You will love it. Most places inside you will not be allowed to use your flash so take the fastest lens you have.

Use ISO 800-1600 indoors to get good low light shots (no flash & no tripod allowed).
Bring your widest lens. You'll wish you had a wider one in a lot of the rooms.
Bring extra CF cards.
Take as many of the tours as you can squeeze in.
Don't miss the indoor pool under the tennis courts.
If you have time, go down the road about ten minutes to Cambria for lunch, drive out Moonstone Beach drive, and go walk around the rocks, tidepools, etc and see the seals if they are there (also at San Simeon beach). For dinner, there is a fantastic Italian restaurant in Cambria at the south end of town just off the main street.

For the inside shots, at least, shoot RAW. This will enable you to expose two copies, one for highlights and one for shadows, and blend them in Photoshop. Looks like 18-55 mm is your widest, a 10-22 would help if you could borrow one on short notice.
