This osprey was plucking out the fish's gills one by one and dropping them.

Wonderful shot, the gills are sort of bone like so I would guess not very palatable.

Really, the bird is doing the same as people do, cleaning a fish ready to eat. Well captured, I haven't managed any Osprey shots yet, must try again soon.
