When I was making the decision between going with a D800 and 5D3 I tried them both for a few days. Friend lent me her D800, local camera shop let me borrow one of their 5D3's. I liked the 5D3 initially, it felt just like my other Canon bodies, a very friendly feel. With the D800 I was fumbling for the right button/dial, luckily my friend was with me and she would "adjust" it for me. What sold me on the D800 had nothing to do the way the camera felt, it was that DR and the ability to crop, crop some more and keep cropping. I figured I could get used to the camera, and after a year it now feels normal and I have to pause and think when using one of my Canon bodies.

The grip on the D800 is new compared to previous Nikon's. Definitely worth trying before buying if you are considering it. The 5D3 is very similar to Canon's of the past.

I am completely used to the D800 now, but initially the 5DIII felt much better. The button layout took a bit of time to get used to as well, but now it is second nature. With your gear list, I wouldn't even consider switching personally.

I'm planning to sell the 7D and add the D800 for landscape and the ability to crop without losing too much details and have heard good news about recovering dynamic ranges appeals to me.
