If you can shoot into the sun, that will help to deal with the difficulties of very bright conditions - as long as the sun isn't too low. The key is, as you say, to get the exposure right in the camera... As a rule of thumb, you'll be overexposing by 2+ stops over the reflected reading off of a grass pitch. You'll need to restore contrast to the images, but the benefits are great, not least the pleasing rim-lighting that can be a by-product of this technique.
